strozzapreti, which literally translates as strangled priest - got its name from italian folk law. the story goes that a gluttonous priest ate so much of this tasty pasta that he became larger and larger, until he was strangled by his own priest collar! la terra e il cielo have developed a spelt strozzapreti that really is to die for. la terra is a worker's cooperative established in 1980 in the marche area of central italy. dedicated to both their crop and their craft, the company harnesses the combined efforts of more than 100 small producers to create their entirely organic pasta range, with the best ingredients and traditional methods, whilst contributing to a sustainable food economy for all. the team at la terra manages and controls all the different stages of the production chain, from the sowing of the seeds to the selling of the end product. this includes growing, threshing, storage, milling and not least of all, pasta making! this traceability guarantees the ultimate quality for the range. la terra takes pride in researching and reviving heritage varieties of grains and legumes, such as spelt and durum wheat. the milling of the wholemeal spelt flour is done in la terra's stone mill, powered in an environmentally responsible way by water turbines - the first company in italy to be built using bio-architecture and green building techniques! spelt strozzapreti, as with all of la terra's top-end pasta, is bronze-cast and naturally slow dried at a low temperature which retains more nutrients. you won't find this traditional technique used in many other pastas that are available in the uk. it's a truly artisan pasta that does its italian roots proud. adding just a little virgin olive oil and sea salt makes for a perfectly delicious, simple and healthy dish. just be careful if you've got any priests coming for dinner! buonappetito!
