Spelt, an ancient grain, is organically grown and milled in Somerset. The pearling of the grain allows all the flavours of the dish to be fully absorbed and this is why it makes such an amazing risotto. It is also a great alternative to rice and a delicious addition to casseroles, soups or salads. It is an excellent source of dietary fibre, protein, vitamins and minerals. It is both easy to digest and a good source of slow release energy; so much so the Roman Army called it their marching grain . A delicious accompaniment to all dishes, and as a substitute for rice, lentils or cous-cous. Commonly used in many Italian recipes (where it is known as farro)
